Ingredients:
Cooked Basmati Rice - 5 Cups
Carrot – 1
Red Pepper - 1
Yellow Pepper - 1
Orange Pepper - 1
Spring onions - 1 bunch
Cumin seeds – 1 Tbsp
Curry Leaves - few
Coriander leaves - few
Ginger garlic paste - 2 Tbsp
Vinegar - 1 Tbsp
Soy Sauce – 1 Tbsp
Eggs - 7
Chilli powder - 2 pinches
Salt – to taste
Oil – 7 Table spoons
Method:
Take 5 cups of Basmati rice, add 9 cups of water and cook it in the electric cooker.
Get all the items ready.
Cut spring onions into small pieces.
Cut bell peppers into small pieces.
Grate carrot into small pieces.
Take a big pan, put oil, cumin seeds, curry leaves and then fry them for 5 mins.
Then add grated carrot and fry for 10 mins.
Then add bell peppers and fry them until their rawness vanishes..
Add spring onions and fry all of them for 10 more mins.
Then add vinegar and soy sauce and cook for 2 mins
Then add ginger garlic paste and fry until raw smell goes away.
Add chilli powder and salt.
Then add eggs and fry until eggs are cooked.
Then add coriander leaves
Cook for 5 mins
Add cooked rice to it.
Mix everything well.
Serve hot.
It goes well with hot sauce or any curry.
