Egg And Capsicum Pulusu (Curry)


I have learnt this recipe from my grand-mom. My grand-mom has always been a great cook and love eating everything she cooks. As soon as I came to USA, I began experimenting on various dishes and gradually became quite a decent cook considering all the compliments I get for some of my dishes if not all of them.

Ingredients:
Eggs - 5-6
Green capsicum - 2
Tomatoes - 4
Onions - 2
Curry leaves - 5
Green chillis - 4
A pinch of red chilli powder
A pinch of turmeric powder
Dhaniya-jeera powder - 1/2 Tsp
Garam Masala powder - 1 Tsp
Garlic Cloves - 2
Corainder leaves - Few
Oil&Salt - To Taste

Method:

Boil the eggs
Grind one onion and cut another onion into slices
Cut tomatoes into small pieces
Add ginger garlic paste to the grinded onion paste. Also add garlic cloves and green chillis to it.Add dhaniya jeera powder.







First fry the boiled eggs(do not deep fry)
Remove the eggs and add 3 tablespoons of oil and fry the onion,ginger garlic paste.Add chilli powder as well to this mixture. If u want u can add garam masala podwer at this point itself.
After cooking this paste for 5 mins,check whether the raw smell of onions is gone and add slices of onion to it.






After 2 mins add tomatoes and capsicum.
Close the lid until all the vegetables are cooked.Add salt to taste.










Once the vegetables and gravy are cooked well, add eggs to it and cook for another 3 mins so that all the gravy sticks to the eggs.
Add coriander leaves at the end.








Serve with hot rice.
